Polishing and sealing chocolate coated centres

Chocolate is one of the oldest and most versatile raw materials used in confectionery due to its vast range of types and flavours, and it tastes great.

Whether using white, milk or dark chocolate all are suitable for coating a wide variety of centres such as nuts, fruit, biscuits, gums or liquorice to name but a few.

Once a chocolate coating has been applied, the products appearance, texture and shelf life can be greatly improved by polishing and sealing the product.

The Capol® range of chocolate polishes and sealing agents have been developed over many years and are widely recognised as being the products of choice by many of the world’s leading confectionery manufacturers.

Sometimes, under difficult production conditions, such as using softer or compound chocolate, it is necessary to apply a pre-polish to the chocolate coated centres to help obtain the perfect finish.

These water based products are easy and economical to use and are renowned for their high gloss and excellent stability. 

Our 
UK Vegetarian Society approved confectioners glaze is an excellent quick drying sealing agent which protects the confectionery against moisture and humidity whilst also enhancing the gloss and improving the shelf life and stability of the finished goods.

As with all Capol® products these polishes and sealing agents are subjected to constant monitoring by our QA department, and comply with all national and international food regulations.

When appropriate, Kosher and/or Halal certificates are available on request.


Our core product range for polishing and sealing chocolate coated centres includes:


    Capol® 4648
– Pre-polish specifically developed for use on compound and softer chocolate coated products.

    Capol® 254N – Universal polish designed for use on both chocolate and compound coated confectionery.    

    Capol® 4802 - Organic - An organic alternative to our Capol® 254N.
    
    Capol® 254W – A lighter polish created for use on yoghurt or white chocolate coated centres.

    Capol® 425 – A sealing agent used to improve the stability of the gloss and to protect against moisture and humidity.
